Amanda Rose in Eating Like a Bear plan has a FREE 3 day challenge for anyone.  When you sign up for the plan she sends a video, what to eat and not to eat and grocery list.  She keeps things very simple.  I have started that plan today.  She does a daily video to help plan the day. Intermittent fasting – one hour eating and 23 hour fasting. 23/1 — That sounds really crazy to me.  I have read about intermittent fasting for quite awhile.  My husband and I have been pretty much no grain, no sugar  for two years.  The more I read about it, the more sense it makes to me. I plan to lose 50-70 pounds.  How long that will take, I don’t know.

So here I am day one eating a “really big salad” for lunch, and I mean really, really big. So that salad is huge with mostly lettuce – a little cucumber, onion. Added 5 oz ham, 1 oz cheese, and 1 egg. I added ELAB ranch dressing recipe. When you read more about ELAB Amanda’s goal is to eat between 500-1000 calories a day. I figured today was just over 1,000 calories.

Let me tell you I have never eaten that much food at a meal. It is huge! It took me 55 minutes to eat, and I didn’t quite make it all. My husband said – it was only 4 more bites — it didn’t matter, I couldn’t put any more in my mouth! I was thrilled with how much I did eat. 🙂 I ate my one meal at 12:15pm today.  Many people eat their meal at night with family.  But there is a lot said about not eating within 5-6 hours of going to bed.  I figure I might as well stack everything in my favor to lose weight.  With us being retired – the mid day meal should work for us.  But I can always change the time. I will measure the bowl – I guess it is 2 or 3 qts.
