I thought I would go for a hot lunch today.  I cooked up 8 cups of cauliflower then I sautéed vegetables and added some garlic, 2 T cream and 1 cup cheese.  Continued to cook the ingredients on low for 20 minutes.  It was okay – I only ate 3 of the 4 cups.

Added 1 cup of coleslaw to the meal, and 3 oz of leftover bluegills warmed up.  Trying to add the total on my meal I came up with 1120 calories and 19 total carbs (less if you do net carbs, minus 7 fiber).  I know the carb counting is a big controversial subject.  As long as my carbs are low, I’m good.
