Saturday, May 23. 12 days in to this way of eating. Is it hard? In a few weeks I may say yes, but right now “no” – it hasn’t been hard. The food has been excellent. I have lots more recipes to try. Because I haven’t eaten bread and very little sugar for the last two years – I feel like I was prepping this whole time for the ELAB/OMAD. So far I really like this.
Today was crazy busy. I volunteer at a Humane Society thrift store – the manager was gone today, so I was in charge. People I think were excited to have had some restrictions lifted so they dropped off so many donations! I had this grand plan of my husband bringing me lunch and I would sit and enjoy eating it (I had everything prepped and ready in fridge). I called him at noon said – don’t bring it – I am swamped. It usually takes me close to an hour to eat everything, I didn’t have an hour to sit there. We close at 2pm. I wasn’t sure if I wanted to eat at 2:30 or fast for the day. But I did eat. Tomorrow I’ll try going one hour earlier, and then the next day, by Tuesday I should be back to 12:30 eating. I want to fast one day a week – go 48 hours.
Today was a salad with roast beef from Costco as my main protein. 4 oz roast beef, 2 hard boiled eggs, 2 oz cheese – so that was a little high in protein. But it sure was good!
