I kept reading about folks making “chaffles” and griddle cakes on the keto blogs/websites. When you search for chaffles on the internet, you get lots of hits. You can do a pizzas, guac/cheese, spinach/cheese, ham/cheese, sweet cakes – just about anything you want. I start with a base of 1 egg and 2 T Almond flour – add what I want to that – usually makes two cakes or waffles in the mini cookers. Here are a few recipes…
The picture is the base mix with guac and cheese – super simple.
Bacon, Egg, Cheese : 1 egg, 1/3 cup cheese, 2 pieces bacon – makes 2 chaffles Cook 2 1/2 minutes Approx. 330 calories, 1.2 carbs for 2 chaffles
Pizza: Makes 4 chaffles, use mini-waffle maker – approx 2 T each
- 2 eggs
- 1 cup shredded mozzarella cheese
- 2 Tablespoons almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon garlic powder
- pinch of salt
Once the waffles are made. Put a sauce on top, add toppings and bake 400 degrees for 5 minutes – can broil for a short time if desired!

You can add cream cheese frosting on top (mix swerve confection with cream cheese – HWC to consistency).

Recipe:
For the Chaffle:

1 Tablespoon Butter
-
1 Egg
-
1/2 Teaspoon Vanilla

2 Tablespoons Almond Flour
-
1 Tablespoon Coconut Flour
-
1/8 Teaspoon Baking Powder

1 Tablespoon Monk Fruit
For the Crumble:
-
1/2 Teaspoon cinnamon
-
1 Tablespoon melted butter
-
1 teaspoon Monk Fruit (or other sweetener)

1 Tablespoon chopped pecans
Chaffle: Melt the butter in a bowl, mix in the egg and vanilla. Then mix in the rest of the ingredients for the chaffle.
Crumble: In another bowl with the melted butter for the crumble, add and mix the rest of the ingredients.
Pour half of the chaffle mix into your mini waffle maker or griddle
Top with half of the crumble mixture.
Cook 5 minutes or until done
Repeat with the other half of the ingredients!
Let the Chaffle cool slightly before you spread the frosting on the Chaffle
