Today was a ridiculously big salad (RBS) day and guac griddle cakes!  It was very good –  RBS:  5+ cups romaine, cheese, asparagus, bacon and 3 oz ham.    Guac cakes: 1 egg, 2 T almond flour, seasoning, and guac (individual wholly guac servings).    I didn’t quite eat all my salad.  I also made strawberry ice cream today about 11am, so it would be ready during my 12:30 – 1:30 eating window.  So I did have about 1/4 cup ice cream after lunch.

Ice cream recipe:  1 can coconut cream, 2 T coconut oil (melted), 1/2 cup sugar substitute, 1 tsp vanilla,   Mix all together.  Fold in 1/4 cup strawberries.  Put in ice cream maker.  I have a pampered chef ice cream maker – takes about 35 minutes.

I did my collagen and vitamins and bike ride today!  Good day!

My stomach growled a little this morning –  so I had a big cup of tea this morning.   Yesterday I had bone broth twice to get through my fasting day.

I am making a chocolate cake in the Quick Cooker right now that is no grain/no sugar – low carb – using almond flour.   I still make cookies and sweets for my husband – all no grain/no sugar.  I really don’t want any – but I know I can have it – but during my 1 hour window (like I did with the ice cream today).

 

 

I will have to get back to you on the recipe.  But I want this in here to remind myself!!  I have the Pampered Chef Quick Cooker.  This was made in the Quick Cooker – substituted monkfruit/erythitol for the sugar.  I also belong to Plant Paradox recipe group and I use “Dar’s flour blend”  and substituted that for the flour.  It was good.  It was a little eggy, but I had a bite — my husband ate 95% of it.  It was good cold – I didn’t put frosting on it, and I would add the chocolate chips next time.  But for my first cake in the “quick cooker” it was a success.  The basic recipe is on Pampered Chef website – with the substitutions.
I am very blessed to have a husband (46 years) that supports me.  But you know he has to be thinking (even if he doesn’t say it) – here we go again.  He totally admits as we have changed to no sugar, no grain – that he does feel better.  He does not eat any grain or sugary stuff.  He always turns it down when we are out to eat or at friends.  He asks for no croutons, no bread if it comes with the meal.  He is very good.  He lost 50 pounds several years ago when he started running.  He did a half marathon challenge when he was 57 (9 years ago).  We were eating healthier and he was exercising.  He continues to run 3 days a week and do half marathons.

History shows I have been on a lot, a lot of “diets” and ways to lose weight.  Many were successful – mostly weight watchers.  Why didn’t I go back on weight watchers?  I now have a hard time with all the “diet” – “low cal” – “low fat” and all the additives in those foods.  I think the calorie in/calorie out is still accurate to a degree – but those calories need to be something specific and not a bunch of food with additives.  My RBS I think are good calories!  I have some fat in it, lots of veggies (which I used to never eat enough of) and protein.  I think resetting the body and have it regenerate cells from fasting is good.

But back to “family” – it gets to the point of you really don’t want to see their expression or talk to them about another “WOE” (way of eating).  They never roll their eyes but you know they have to wonder.  My husband is so supportive and goes with the flow.  He doesn’t eat anything bad, he doesn’t bring anything bad in to the house, now he’s adjusting to eating two meals without me daily.  🙂  He still eats his bigger meal at 6pm.  But he tries to eat lunch with me while I have my RBS, but it takes me a long time to eat that much!  He is either in his shop or golfing most days.  He always reads the info on whatever “diet” I am on.  He did good on reading “Wheat Belly” and “Plant Paradox” –which I think prepared me well for the ELAB!!   I don’t have any desire for many things that others would want.  When I told him about ELAB, he was good and read through the website.  He gets headaches when he misses a meal, so he really questioned fasting 23/1  – but he supported me.  16 days in, and all seems to be going good – had a couple 48 hr fasts in there.  He is surprised.  I need to keep going – I have that choice each day and I need to remember that – this is my choice!
