Vacation – 5 weeks on the road and in a travel trailer from Arizona to Michigan.

Had some interesting lunches.  Always had lettuce in the truck and added to it while “tailgating” in rest stops.  We had food in the cooler (roast beef,  mini-meatloaves, egg bites, yogurt, cheese, veggies and dressing), if there wasn’t a good eating place.  Some days we ate out of the back – other days I had my lettuce and I just threw in a grilled chicken salad on top or a Taco Bell power bowl (without rice or grain) or a lettuce wrapped burger from Hardees/Carl’s.  I ate one meal a day and did not do a fast day for the 4 night road trip (I thought maybe I might).  Once we got to our destination and opened up our RV/trailer (that’s parked in MI), we went to Costco and stocked up!

We have had kids/grandkids from WA visiting for 5 days, family members in the hospital here in MI, a very busy first 2 weeks here on “vacation”.  But we have been able to get lots of fishing in, which is great.  I usually eat somewhere between 1-3pm.  Sometimes a little later, but seldom earlier.  One day we had a family “fish” fry at 6pm, so I ate with everyone.  I had a smaller salad with lots of bluegills!  We don’t eat grain – so I get them to fry up separate fish for my husband and I that has an almond/coconut/cassava flour coating.  They are delicious!  We always look forward to the big “fish fry” and thoroughly enjoy it!  I did do a fast the next day.

Yesterday, day 68 was the first day I really kind of craved something sweet.  So I searched what I could eat during my one hour window…it’s kind of very powerful when you “choose” to eat just the right food.  After a large RBS with turkey, pepperoni, cheese on veggies with a “cloudie” bread.  I decided on half a chocolate Kind bar.  Which was also liberating because I threw half of it away, in the past I would have eaten one plus another and ….   Although today my stomach has been growling a little, which I contribute to actually eating the “sugar” in the Kind bar – but maybe that’s my imagination!

I will add some pictures of the crazy salad concoctions I did on our trip later.  I just hadn’t written in awhile, so wanted to get back to it!  I do try to read the ELAB Facebook  page every day if I can – that is so positive – it gives you a daily boost!!  I really think Amanda’s ELAB Facebook page is a wonderful encouragement and page for resources and inspiration.

Going to MI from AZ I had 2 bags of lettuce in the cooler and my “big salad bowl” – packed lunch meat, bacon, cheese and dressing in the cooler.  My husband each day asked what I else I wanted with my salad.  One day we had Carl’s/Hardees lettuce wrapped guac burger, another day we had Taco Bell power bowl without rice (extra lettuce – see pic below – I had to laugh), the other day we just tail gated with “meat loaves” I made before we left home.  We ate each day in the truck – salad bowl will travel!  Washed it out each night in the hotel!  Ready for the next day – bowl and fork!

I thought I would go nuts to not eat/munch while I drove for my couple hours a day.  I used to cut back on my eating by having one “nut” or “popcorn kernel” every two mile marker on the freeway.  But this time I didn’t even think about eating.  I did always have my drink.  I do occasionally have gum (PUR only).
