So I am several days behind and need to catch up. I thought every night I would sit down and write in “my journal” but sometimes life gets in the way! But I did take pictures each day. I even remembered to take the salad pic before I mixed it up! I really wanted to do stuffed peppers – Amanda had them on one of her videos. They looked good. I didn’t see her recipe in her course, so I searched and experimented. We liked the results!
Friday – Day 19
I broiled the peppers first and then pealed the clear skin off (my husband did this). That was the first for us – didn’t know there was a skin to peel! Cooked 1 pound burger with taco seasoning, added 4 oz cream cheese, a little water and 1/4 cup shredded cheese. Once the peppers were cool enough, I de-seeded them – one I cut down the side, the others I just cut the stem part out and with long spoon got the seeds out. I stuffed the peppers and then baked for 15 minutes on 400 degrees and then added 5 minutes of broiling them. It was all a guess from several different recipes – but they were delicious!! I also had some broccoli with cheese sauce and a big salad. I had 4 peppers and used about 3/4th of the burger. So I figure 3 oz burger in peppers. I had 2 oz salami on the salad. Cheese was at least 3 oz. So my protein was high today.
Saturday – Day 20
Leftover pepper and salad. I used the leftover burger on my salad with the pepper. It was really good. Another busy say. Volunteer at Humane Society thrift shop for half a day. Didn’t eat until closer to 1:30pm. I remembered my vitamins today!
Sunday- Day 21 Today I decided to also have two guac cakes with my salad. (see below) It makes two and very low carb. My salad was roast beef and cheese. My salads are minimum 5 cups lettuce. I usually mix romaine and spinach. Very good meal today. I am doing ok on the 23/1 OMAD, which surprises me. I really am surprised. I do get hungry or stomach growling most times in the morning. But I ignore it or have tea or drink water. Nothing has been unbearable, just keep the “grind” going as Amanda says. I did remember to take vitamins today. I drank my electrolyte – 12 oz water mixed with my grape electrolyte powder. I also mixed 2 scoops of the collagen in with 2 oz premiere shake and 3 oz of almond milk – used my little battery emulsion mixer to whip it – poured i over ice. It tastes almost like a treat.
I really like the little griddle. I also have the mini waffle maker when I heard folks talking about “chaffles”. But I like the griddle the best for making griddle cakes with almond flour/egg and whatever else I add.
Guac cakes: I mixed 3 T almond flour, 1 egg,, 2 T guacamole, 1/4 cup shredded cheese. We use sheep cheese. Also used wholly guacamole with no additives. Then I “cook in my little griddle maker. Makes 2 cakes.
I do like the fact I can just tell myself NO and not eat the rest of the day. That probably sounds weird, but it’s almost easier then trying to decide what to eat that’s healthy. It’s just drinking all day and eating for one hour.
