Today is Sunday, June 7, 2020.  I have missed writing for a few days.

Out of the blue on Wednesday night  we are watching TV and my husband says, “I am totally supportive of your way of eating.”  There is a “but” coming…and I don’t know what it is because he is always supportive.  But like I’ve said he has to wonder how long it will last every time I am ready to lose weight.  So I said “But…”  He says, “It’s been 3 weeks and I really want a Carl’s burger or pizza.”  We use to go to Carl’s a couple times a month – they do great lettuce wrap burgers.  He gets fries.  I use to make pizza (no grain)  a couple times a month, but hadn’t since I started the RBS (really big salad).  I had to laugh – I thought it was going to be something crazy or hard or non-supportive or something.  This was easy!  “OK, let’s go to Carl’s tomorrow and get a lettuce wrap.  If we can take it to go I will make my salad before we go and we can come home and eat.  If you want to eat there (we haven’t eaten in restaurants since the Covid-19), I will come home and eat salad afterwards.”  He was “no – we can take it to go and eat here.”  I also told him I had new pizza recipes I wanted to try and we could do pizza on Friday (which used to be our pizza night).  🙂  So all was good!

Day 25 – Thursday

Carl’s Jr day after doing a little shopping.  We both got a double guac lettuce wrap to go.  My husband was glad to get his fries and pop.  We took it home and I had my RBS with lettuce wrap burger.  Very good!

 

 

 

 

Day 26 – Friday   I typically eat around 1pm daily, 1 hour eating window.

So, today I made a couple different pizzas.  One was a cauliflower pizza and the other had a cheese/egg crust.    The cauliflower pizza recipe was from here:  https://theopenmagazines.com/recipe/keto-cauliflower-crust-pizza/       I used frozen cauliflower rice, defrosted and then stir fried the cauliflower.  I did then squeeze out the liquid and added it to the rest of the ingredients.  I agree on letting it sit for 5-10 minutes before adding sauce/toppings to let it firm up.  I actually flipped it before adding the sauce/toppings.

The other crust was:  5 eggs, 8 oz grated cheese, add seasoning and garlic powder. I did add 1/4 cup cassava flour and tsp xanthum gum.   Baked at 400 degrees  on parchment paper for 15 mins, Add sauce/toppings – put back in oven for 5-10 mins.  Might want to broil for a couple minutes.  I had two pieces of each with my RBS.  Very good!!  My husband liked the cauliflower crust a little better.  But that might have been because it had more veggies on it!!

 

 

 

Day 27 – Saturday

I did a fasting today.  I finished eating Friday by 1:30pm.  Friday we were busy all day – did an estate sale to help out a friend.  Gone for 12 hours and dead tired when we got home.  I had some tea after we got home.  Had computer work to do and went to bed early.  The days I know will be hectic or super busy, are great days for me to fast.

Day 28 – Sunday

I had taken steaks out of the freezer on Friday, so we grilled those today.  I made a big salad and had that with my steak.  I kind of forgot to take a picture of my steak & mushrooms before I ate most of it!

 

 

 

 

 

 

So tomorrow, Monday, is day 28.  Actually 4 weeks doing the Eat Like a Bear – RBS – Ridiculously Big Salads!!!  I’ve tried to fast one day a week, but only made 3 times in 4 weeks.
