I have been terrible about posting lately!  The RBS (Ridiculously Big Salad) for OMAD (One meal a day) has been going good.  I try to do a 48 hour fast weekly, but usually every other week.  We have been traveling lots and seem to be super busy, but the OMAD has not been a problem.

I find it interesting that I have always enjoyed salads, but not a huge veggie person.  My husband loves every vegetable on earth, not me…  My salad has always been more meat and cheese than lettuce in my life….

I thought I would throw in some pictures, since I don’t have anything super exciting to say!!!  It seems even if I fix a bunch of other veggies – cole slaw, asparagus, zucchini noodles – a few of the vegetables I like.  I still want to have a salad, so I fix a little one.  It’s just like my meal isn’t complete now unless I have a salad.

During our vacation  I always carried a bag of lettuce with us in a cooler, that way I could add to any salad I bought drive thru or if I got a lettuce wrap burger, add a salad to it.  BUT I do the same thing when we are going out to lunch now that we are home – if we are going in to Phoenix (about 35 mins a way), I have lettuce in a cooler with my handy blue bowl. 🙂

I have been experimenting lately with some sugar/grain free deserts that my husband eats any time but if I taste, it’s only during my one hour window!  I made some apple crisp the other day that was amazing to look at – I couldn’t wait to taste it the next day.  Well, that was a mistake.  After a 48 hour fast I had a LARGE serving of apple crisp and then a salad.  I didn’t even get through the salad before I had to run for the bathroom.  I had 20 minutes of diarrhea immediately.  So that wasn’t the way to break a fast.  Cleaned me out good.  That was the end of my lunch.  I had my salad first today with asparagus and an egg – THEN I had a small piece of apple cake (sugar/grain free).  Today was good. Stomach was fine.  I only had diarrhea two other times in 4 months.  I wish I could remember if it was after a 2 day fast.  I need to pay attention to that.  🙂
